Produced in our automated bakery, we have a special area where these crusts are hand worked to form a traditional raised edge…just like Mama used to make!




TRIPPLE RISEN DOUGH

Never rush a good thing! The dough for our Gourmet Hand Raised Edge crusts is given the time to rise three times throughout the leavening and forming process to ensure a light and airy crust with superior texture and taste.

Near the end of this process, prior to baking, it is brushed with olive oil to help sela in the moisture and flavor. It is then worked by hand to form a pizzeria-style raised edge and to help further develop the dough’s texture and overall cell structure.

The result…a very memorable eating experience time and time again!
