What differentiates our crusts from other par-baked crusts?
The dough for our crusts is given the time to rise twice throughout the leavening and forming process to ensure a light and airy crust with superior texture and taste. It is also worked by hand to help further develop the dough's texture and overall cell structure. The result: A very memorable eating experience time and time again.
Why are our pizzas better?
Our crust dough is DOUBLE-PROOFED and COLD-PRESSED vs. hot-pressed, manually controlled leavening with rollers. Our Flour is HIGH-PROTEIN, strong bakers, which helps with the development of the product. We use 100% REAL Mozzarella cheese vs. imitation, soy products. Our sauce is made-to-order, in-house, thus preserving its FRESHNESS. Mama's own special blend of spices creates an exceptional, unique sauce.The Tomatoes used in our sauce are from California, which provides for a SWEETER, fresher, less acidic flavour. Most of the pepperoni used is DRY CURED vs. cooked.
What is the difference between a cold/hot press and a sheeted line?
COLD PRESS: At Molinaro's, we pride ourselves in using a traditional Italian-style Cold Press line. We produce all of our crusts using a cold-pressed dough ball line. This means that our dough is allowed to go through the complete natural leavening process, ensuring a well developed dough and great tasting finished product.This type of line does restrict the number of units we can produce per minute, but it allows us to make a very unique product with the flexibility to produce various artisano-style crusts.
SHEETED: Most other par-baked pizza crust manufacturers use a sheeted line which allows them to run product at a faster speed for mass production. This process lets them manually control the leavening process with rollers, chemical additives and other equipment. This product, once finished, resembles a cookie-cutter style product with an under-developed dough that is lacking in cell structure and natural yeast flavor.

Molinaros as it exists today, has been in operation since 1993, but the family has been in the pizza industry since 1964.
